These delicious zucchini noodles (or zoodles) with avocado sauce are ready in 10 minutes. Besides, this recipe requires just 7 ingredients to make.
I've tried so many diets andcarbs weren't allowed in anyof them. I could live with no fat or even without desserts and other sweet treats, but I couldn't live without carbs. That's why these diets didn't work for me. I lost 26 pounds or 12 kilos, but it was hard tokeep theweightoff. I'm following a high carb diet now and I'mso happy and healthy. If you eat healthy carbs like rice or potatoes, you don't have to be afraid to gain weight, just avoid refined carbs and excess fat in your diet.
I eat gluten-free pasta once or twice a week, but I'm in love with these zucchini noodles (or zoodles), they're so healthy and delicious. You can use other veggies like cucumber, carrotorpumpkin.
To make your zoodles more tasty, use your favorite pasta sauces, but try to choose healthy fats like avocados, nuts and seeds. Remove animal fats from your diet and also refined and hydrogenated oils.
This is a raw vegan recipe,so you won't find animal products or cooked food here. Many vitamins are water-soluble and a significant percent can be lost with cooking, so raw food is so healthy because is full of vitamins and minerals. Besides, raw food is really easy to prepare and many recipes areready in less than 10 or 15 minutes!
To make the zucchini noodles I use a tool calledSpiralizer, ittransforms fruits and vegetables in just a few simple steps into spaghettis, spirals or slices. The noodles are ready in less than 5 minutes and the Spiralizer is really easy to clean, it's totally worth it!
Slice off one end of the zucchini so that you have a flat surface to place on the Spiralizer. Press the zucchini against the blade of the Spiralizerand crank the handle of the simple machine.
You only need 5ingredients to make the creamy avocado sauce: water, lemon juice, avocado, pine nuts and basil. Feel free to use other nuts instead of the pine nuts (I love cashews and walnuts) or any leafy green instead of the basil (spinach also works).
Once you've made the zoodles and blend all the sauce ingredients in a blender, you just need to combineboth and add some cherry tomatoes on top.
The kids love this super healthy pasta recipe! You can also add:vegan Parmesan cheese, nutritional yeast, sea salt, black pepper, other spices or herbs.

Hi Iosane, I just made this and it is soooooo yummy. Very light and not too rich like pesto with oil and Parmesan. Glad I found the recipe 👍
PS The first time I have ever commented on a recipe it was so nice thank you.Reply

Delicious! We used a large avocado and had to fix more noodles so it looked less like pistachio pudding with a little something in it. 🙂Reply
Iosune Robles says
Hi Darlene! Sounds good too 🙂

This looks great. I have no lemons. Can I use limes instead?
Reply
Iosune Robles says
Hi Jessica! Maybe you can use apple vinegar 🙂

Yummy! Needed some salt and pepper but otherwise the taste was delicious! It was a tad too much sauce for me so I saved some to use as a dip later.Reply

Tastes good! I peeled the zucchinin into thin slices and sauteed it for a quick minute. I also added some lightly sauteed mushrooms. For the sauce, I added about 1.5 tsp minced garlic some garlic and a bit of salt/pepper to taste. I used a little more lemon juice, too, because it was too thick to blend; I'll probably opt to just use water next time. Note that the avocado sauce yields about 2 cups and, at least IMHO, 2 Tbs was plenty to coat the single zucchini and tomatoes. So there's lots of avocado sauce left to coat other stuff. 😄Reply

So glad you liked our zucchini noodles Selah 🙂 Have a nice day!

Can this be made in the morning and brought to work? Does the lemon juice keep it from turning brown?
Reply
Iosune says
Hi Willa! Yes, it can, but I think it's better freshly made 🙂

I made this for lunch today and it was so good. I replaced basil with spinach and pine nuts with pumpkin seeds. I've been struggling with getting creative with my raw meals and was in a routine of eating the same meals everyday so this was a nice change. This recipe will definitely be added to my rotation :).Reply
Iosune says
Hi Jenyve! Sounds good 🙂 So glad you enjoyed it!

Tried it for lunch today. I've been trying to be keto for the last 4 weeks. I realised that I've been eating a lot of animal protein. Thank you for this recipe. It is very yummy. I am.going to get nutritional yeast next time I go shopping to see what that flavour is like. I enjoy the freshness from adding lime juice instead of lemon juice and the burst of juice from Roma tomatoes instead of cherry tomatoes. Thank you!Reply
Iosune says
Hi Eleanor! You're so welcome 🙂 So glad you liked it!

Would anything else make a good sauce for this other than avocado? Maybe cashews? Or soy yogurt?

Hi Elizabeth! I think any nut butter could work 🙂

Just made this today and it's so tasty! I used 4 zucchinis, but only doubled the avocado blend (I did add a bit more water, but only because I thought it wouldn't be enough sauce for the 4 zucchinis -- but it turns out it was more than enough). I added these to the avocado sauce: salt, pepper, fresh garlic. And besides the tomatoes at the end, I also added sliced red onion. Thanks for a great and EASY recipe!Reply

Hi Susan! Sounds great 🙂 So glad you liked it!

This was my first attempt at a "raw food" recipe. It was interesting because I wasnt sure exactly how the sauce was supposed to taste. My husband said it tasted like tomatoes, which was odd since there was none in the sauce LOL. Once I put the whole thing together though, he said it was REALLY GOOD which I was not expecting. Will be adding this to my list of raw meals 🙂Reply
Iosune says
Hi Catherine! So glad you liked it 🙂

We used pepitas and walnuts since we didn’t have pine nuts. Also doubled the amount of zucchini (still very saucy). I think a little salt and pepper brought out the avocado flavor nicely. Really good!

Tyshieha S Keitt says
This was delicious. I am new to raw food and it allows you to get the saucy feel and the spaghetti feel that you are not able to eat. I added salt, pepper, and paprika and it was good.Reply

Hi Tyshieha! So glad you liked it 🙂 Have a nice day!

Where did you get your wooden fork from? I"ve been looking to get wood utensils instead of metal, but all I can seem to find is disposable bamboo rather than for daily use. I had one set that I received with this green friendly lunchbox type thing, but that was the only time I've come across it. Thanks and thanks for the recipe! This will be soo good this summer when I grow zucchinis and cherry heirlooms!! And extra happy it's raw too!

Hi,
I loved this recipe! I added some garlic because I couldn't resist and it was simply amazing.
Side note: the double negative the lady above is referring to is when you say, "weren't allowed in none of them". Should be any instead of none. Just thought you should know... Didn't see the point in being rude about it though?
Have an awesome day 🙂
